Ingredients

  • 2 cups dried black-eyed peas, soaked overnight
  • 2 ripe plantains, peeled and sliced
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon curry powder
  • 2 cups vegetable broth
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and ginger. Sauté until fragrant.
  2. Add chopped tomatoes and bell pepper to the pot. Cook until the vegetables are soft and the mixture thickens.
  3. Stir in paprika, cayenne pepper, and curry powder. Cook for another 2 minutes.
  4. Add the soaked black-eyed peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes or until the peas are tender.
  5. Add the sliced ripe plantains to the pot and cook for an additional 10 minutes until the plantains are soft and the stew thickens.
  6. Season with salt to taste. Serve hot.
