Ingredients
- 2 cups dried black-eyed peas, soaked overnight
- 2 ripe plantains, peeled and sliced
- 1 onion, chopped
- 3 tomatoes, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon curry powder
- 2 cups vegetable broth
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and ginger. Sauté until fragrant.
- Add chopped tomatoes and bell pepper to the pot. Cook until the vegetables are soft and the mixture thickens.
- Stir in paprika, cayenne pepper, and curry powder. Cook for another 2 minutes.
- Add the soaked black-eyed peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes or until the peas are tender.
- Add the sliced ripe plantains to the pot and cook for an additional 10 minutes until the plantains are soft and the stew thickens.
- Season with salt to taste. Serve hot.
