Ingredients

  • 2 cups jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth

  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large pot, combine the rice, coconut milk, chicken broth, bell peppers, onions, tomatoes, garlic, paprika, turmeric, salt, and black pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed.
  4. Fluff the rice with a fork and let it sit, covered, for 5 minutes before serving.
