Ingredients
- 2 cups jasmine rice
- 1 can (14 oz) coconut milk
- 1 cup chicken broth

Instructions
- In a large pot, combine the rice, coconut milk, chicken broth, bell peppers, onions, tomatoes, garlic, paprika, turmeric, salt, and black pepper.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and let it sit, covered, for 5 minutes before serving.
