Refogado de Porco Picante, or Spicy Pork Stir-Fry, is a popular dish in East Timor cuisine. This flavorful and spicy stir-fry is a perfect combination of tender pork, aromatic spices, and fresh vegetables.

Refogado De Porco Picante (spicy Pork Stir-fry)

Ingredients

  • 500g pork loin, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 red chilies, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over high heat.
  2. Add the pork slices and stir-fry for 3-4 minutes until browned. Remove the pork from the wok and set aside.
  3. Heat the remaining oil in the wok and sauté the onion and garlic until fragrant.
  4. Add the bell peppers and chilies, and stir-fry for 2-3 minutes.
  5. Return the pork to the wok and add the soy sauce, oyster sauce, and sugar. Stir-fry for another 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Transfer to a serving dish and serve hot with steamed rice.
