Refreshing Bozo (Бозо)
Bozo is a traditional fermented beverage from Kyrgyzstan, known for its refreshing and slightly tangy flavor. It is made from millet or wheat and is a popular drink during the hot summer months.
Ingredients
- 2 cups millet or wheat
- Water
- 1 tablespoon yogurt or whey (as a starter culture)
Instructions
- Rinse the millet or wheat thoroughly and place it in a large bowl.
- Cover the grains with water and let them soak for 12 hours.
- After soaking, drain the water and grind the grains into a coarse paste.
- Transfer the paste to a clean, large container and mix in the yogurt or whey.
- Cover the container with a clean cloth and let it ferment at room temperature for 24 hours.
- After fermentation, the bozo is ready to be served. Stir well before serving and enjoy!
