Reggae Spring Rolls

Ingredients

  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1 cup bean sprouts
  • 1 cup cooked and shredded chicken (optional for non-vegetarian version)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the cabbage, carrots, bean sprouts, and shredded chicken (if using).
  2. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, ginger, and garlic. Pour this mixture over the vegetable and chicken mixture, and toss to combine.
  3. Place a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon 2-3 tablespoons of the vegetable and chicken filling onto the bottom third of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Use a bit of water to seal the top corner of the wrapper.
  4. Heat vegetable oil in a pan over medium heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
  5. Serve the Reggae Spring Rolls hot with your favorite dipping sauce.
