Rempah Raya Rhapsody

Ingredients

  • 500g chicken, cut into pieces
  • 2 cups coconut milk
  • 5 shallots
  • 3 cloves garlic
  • 2 lemongrass stalks
  • 1 inch ginger
  • 1 inch galangal
  • 5 dried chilies
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste

Instructions

  1. Grind shallots, garlic, lemongrass, ginger, galangal, and dried chilies into a paste.
  2. Heat some oil in a pot and sauté the spice paste until fragrant.
  3. Add turmeric powder, coriander powder, and cumin powder. Cook for 2 minutes.
  4. Add chicken pieces and cook until they are no longer pink.
  5. Pour in the coconut milk and simmer for 45 minutes, stirring occasionally.
  6. Season with salt to taste and serve hot.
