Rempah Raya Rhapsody
Rempah Raya Rhapsody is a traditional Malay dish that bursts with a symphony of flavors and aromas. This dish is perfect for celebrating festive occasions with family and friends.
Ingredients
- 500g chicken, cut into pieces
- 2 cups coconut milk
- 5 shallots
- 3 cloves garlic
- 2 lemongrass stalks
- 1 inch ginger
- 1 inch galangal
- 5 dried chilies
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- Salt to taste
Instructions
- Grind shallots, garlic, lemongrass, ginger, galangal, and dried chilies into a paste.
- Heat some oil in a pot and sauté the spice paste until fragrant.
- Add turmeric powder, coriander powder, and cumin powder. Cook for 2 minutes.
- Add chicken pieces and cook until they are no longer pink.
- Pour in the coconut milk and simmer for 45 minutes, stirring occasionally.
- Season with salt to taste and serve hot.
