Rendang Daging (beef Rendang)
Rendang Daging, or Beef Rendang, is a flavorful and aromatic dish that originated from the Minangkabau ethnic group of Indonesia. It is a popular dish in Indonesian Chinese Cuisine and is often served during special occasions and celebrations.
Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1-inch galangal, sliced
- 1 turmeric leaf, torn
- 3 cups coconut milk
- 1 cup water
- 2 tbsp tamarind paste
- 3 tbsp palm sugar
- Salt to taste
Instructions
- In a large pot, combine the beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, turmeric leaf, coconut milk, and water.
- Place the pot over medium heat and bring the mixture to a boil. Reduce the heat to low and simmer for 2 hours, stirring occasionally.
- Add the tamarind paste, palm sugar, and salt. Continue to simmer for another hour or until the beef is tender and the sauce has thickened.
- Adjust the seasoning if needed and serve the Rendang Daging hot with steamed rice.
