Ingredients

  • 2 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1 turmeric leaf, torn
  • 3 cups coconut milk
  • 1 cup water
  • 2 tbsp tamarind paste
  • 3 tbsp palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, turmeric leaf, coconut milk, and water.
  2. Place the pot over medium heat and bring the mixture to a boil. Reduce the heat to low and simmer for 2 hours, stirring occasionally.
  3. Add the tamarind paste, palm sugar, and salt. Continue to simmer for another hour or until the beef is tender and the sauce has thickened.
  4. Adjust the seasoning if needed and serve the Rendang Daging hot with steamed rice.
