Rendang Daging (beef Rendang Sliders)
Rendang Daging, also known as Beef Rendang, is a flavorful and aromatic dish originating from Indonesian Indian cuisine. This recipe puts a delicious twist on the traditional dish by turning it into sliders, perfect for serving at parties or as a fun appetizer.
Ingredients
- 2 lbs beef chuck, cut into small pieces
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 2 cans (14 oz each) coconut milk
- 1 cup desiccated coconut
- 3 tbsp tamarind paste
- 3 tbsp palm sugar
- Salt to taste
- 12 slider buns
Instructions
- In a large pot, combine beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and coconut milk.
- Bring to a boil, then reduce heat and simmer for 2 hours, stirring occasionally.
- Add desiccated coconut, tamarind paste, palm sugar, and salt. Continue to simmer for another hour until the beef is tender and the sauce is thick.
- Shred the beef using two forks and continue to cook until the sauce is reduced and coats the beef.
- Assemble the sliders by placing a generous amount of beef rendang on each bun.
