Ingredients
- 1 kg beef, cut into cubes
- 4 shallots
- 5 cloves garlic
- 3 red chilies
- 2 stalks lemongrass
- 4 kaffir lime leaves
- 1-inch galangal
- 1-inch ginger
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp fennel powder
- 1/2 tsp cinnamon powder
- 1/2 tsp nutmeg powder
- 1/2 tsp cloves
- 1/2 tsp cardamom powder
- 400 ml coconut milk
- 2 tbsp tamarind paste
- Salt to taste
- Sugar to taste
Instructions
- Grind shallots, garlic, red chilies, lemongrass, kaffir lime leaves, galangal, and ginger into a paste.
- Heat some oil in a pot and sauté the spice paste until fragrant.
- Add the beef and cook until it changes color.
- Add the turmeric, coriander, cumin, fennel, cinnamon, nutmeg, cloves, and cardamom powder. Mix well.
- Pour in the coconut milk and tamarind paste. Stir and bring to a simmer.
- Cover and cook on low heat for 2-3 hours until the beef is tender and the sauce is thick.
- Season with salt and sugar to taste.
