Ingredients

  • 1 kg beef, cut into cubes
  • 4 shallots
  • 5 cloves garlic
  • 3 red chilies
  • 2 stalks lemongrass
  • 4 kaffir lime leaves
  • 1-inch galangal
  • 1-inch ginger
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp fennel powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp nutmeg powder
  • 1/2 tsp cloves
  • 1/2 tsp cardamom powder
  • 400 ml coconut milk
  • 2 tbsp tamarind paste
  • Salt to taste
  • Sugar to taste

Instructions

  1. Grind shallots, garlic, red chilies, lemongrass, kaffir lime leaves, galangal, and ginger into a paste.
  2. Heat some oil in a pot and sauté the spice paste until fragrant.
  3. Add the beef and cook until it changes color.
  4. Add the turmeric, coriander, cumin, fennel, cinnamon, nutmeg, cloves, and cardamom powder. Mix well.
  5. Pour in the coconut milk and tamarind paste. Stir and bring to a simmer.
  6. Cover and cook on low heat for 2-3 hours until the beef is tender and the sauce is thick.
  7. Season with salt and sugar to taste.
