Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots

- 4 kaffir lime leaves
- 1-inch galangal, sliced

- 4 red chilies
- 3 cups coconut milk
- 1 tbsp tamarind paste
- 2 tbsp palm sugar
- Salt to taste
Instructions
- Grind shallots, garlic, lemongrass, red chilies, galangal, and ginger into a paste.
- In a pot, combine the beef, spice paste, kaffir lime leaves, and coconut milk. Cook over low heat for 2 hours, stirring occasionally.
- Add tamarind paste, palm sugar, and salt. Cook for an additional 1 hour or until the beef is tender and the sauce thickens.
- Serve hot with steamed rice.
