Ingredients
- 1 kg beef, cut into cubes
- 4 cups coconut milk
- 6 kaffir lime leaves
- 4 lemongrass stalks, bruised
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 3 red chilies, sliced
- 2 Tbsp tamarind paste
- 2 Tbsp palm sugar
- Salt to taste
Instructions
- In a large pot, combine the beef, coconut milk, kaffir lime leaves, lemongrass, shallots, garlic, galangal, ginger, and red chilies.
- Cook over low heat for 2 hours, stirring occasionally.
- Add tamarind paste, palm sugar, and salt. Continue to cook for another hour or until the beef is tender and the sauce thickens.
- Serve hot with steamed rice.
