Ingredients

  • 1 kg beef, cut into cubes
  • 4 cups coconut milk
  • 6 kaffir lime leaves
  • 4 lemongrass stalks, bruised
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 3 red chilies, sliced
  • 2 Tbsp tamarind paste
  • 2 Tbsp palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, coconut milk, kaffir lime leaves, lemongrass, shallots, garlic, galangal, ginger, and red chilies.
  2. Cook over low heat for 2 hours, stirring occasionally.
  3. Add tamarind paste, palm sugar, and salt. Continue to cook for another hour or until the beef is tender and the sauce thickens.
  4. Serve hot with steamed rice.
