Ingredients

  • 1 kg beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 1 cup water
  • 3 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the beef cubes and cook until browned on all sides.
  3. Pour in the coconut milk and water, then add the lemongrass, kaffir lime leaves, and salt. Stir well to combine.
  4. Reduce the heat to low and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  5. Once the beef is tender and the sauce has reduced, remove the lemongrass and kaffir lime leaves. Continue to simmer until the sauce is thick and coats the beef.
  6. Serve the Rendang Daging Pedas hot with steamed rice.
