Rendang Daging Pedas (spicy Beef Rendang)
Rendang Daging Pedas, or Spicy Beef Rendang, is a traditional Eurasian dish known for its rich and flavorful taste. This slow-cooked beef dish is simmered in a fragrant blend of spices, coconut milk, and chili, resulting in a tender and aromatic delicacy.
Ingredients
- 1 kg beef, cut into cubes
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 400ml coconut milk
- 1 cup water
- 3 tbsp vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the shallots and garlic, and sauté until fragrant.
- Add the beef cubes and cook until browned on all sides.
- Pour in the coconut milk and water, then add the lemongrass, kaffir lime leaves, and salt. Stir well to combine.
- Reduce the heat to low and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
- Once the beef is tender and the sauce has reduced, remove the lemongrass and kaffir lime leaves. Continue to simmer until the sauce is thick and coats the beef.
- Serve the Rendang Daging Pedas hot with steamed rice.
