Ingredients

  • 2 lbs beef, cut into cubes
  • 4 shallots, chopped
  • 5 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 cinnamon stick
  • 1 star anise
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 3 tbsp tamarind paste
  • 2 tbsp brown sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, shallots, garlic, ginger, lemongrass, kaffir lime leaves, cinnamon stick, star anise, coconut milk, and water.
  2. Cover and cook over low heat for 2 hours, stirring occasionally.
  3. Add tamarind paste, brown sugar, and salt. Continue to cook for another hour, or until the beef is tender and the sauce has thickened.
  4. Remove the cinnamon stick, star anise, and lemongrass stalks before serving.
