Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots, chopped

- 1 star anise
- 1 can (14 oz) coconut milk
- 1 cup water
- 3 tbsp tamarind paste
- 2 tbsp brown sugar

Instructions
- In a large pot, combine the beef, shallots, garlic, ginger, lemongrass, kaffir lime leaves, cinnamon stick, star anise, coconut milk, and water.
- Cover and cook over low heat for 2 hours, stirring occasionally.
- Add tamarind paste, brown sugar, and salt. Continue to cook for another hour, or until the beef is tender and the sauce has thickened.
- Remove the cinnamon stick, star anise, and lemongrass stalks before serving.
