Rendang Daging (spiced Beef Rendang)

Ingredients

  • 2 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1-inch galangal, thinly sliced
  • 1-inch ginger, thinly sliced
  • 4 red chilies, sliced
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 2 tbsp tamarind paste
  • 2 tbsp palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies.
  2. Pour in the coconut milk and water. Add tamarind paste, palm sugar, and salt.
  3. Cook over low heat for 3 hours, stirring occasionally, until the beef is tender and the sauce is thick.
  4. Serve the rendang daging hot with steamed rice.
