Rendang Daging (spiced Beef Rendang)
Rendang Daging is a traditional dish from Palembang cuisine, known for its rich and aromatic flavors. This spiced beef rendang is slow-cooked to perfection, resulting in tender meat infused with a blend of exotic spices.
Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1-inch galangal, thinly sliced
- 1-inch ginger, thinly sliced
- 4 red chilies, sliced
- 1 can (14 oz) coconut milk
- 1 cup water
- 2 tbsp tamarind paste
- 2 tbsp palm sugar
- Salt to taste
Instructions
- In a large pot, combine the beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies.
- Pour in the coconut milk and water. Add tamarind paste, palm sugar, and salt.
- Cook over low heat for 3 hours, stirring occasionally, until the beef is tender and the sauce is thick.
- Serve the rendang daging hot with steamed rice.
