Rendang Nachos
Rendang Nachos is a fusion dish that combines the rich and flavorful Indonesian Rendang with the crunchy and cheesy goodness of nachos. It's a perfect appetizer or snack for any occasion, and it's sure to be a hit at your next gathering!
Ingredients
- 1 lb beef, thinly sliced
- 2 cups coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, sliced
- 1 inch galangal, grated
- 2 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 1 tsp turmeric powder
- 1 tsp tamarind paste
- 1 tsp brown sugar
- Salt to taste
- 1 bag of tortilla chips
- 2 cups shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapenos
- 1/4 cup chopped cilantro
Instructions
- In a large pot, combine the beef, coconut milk, shallots, garlic, red chilies, galangal, lemongrass, kaffir lime leaves, turmeric powder, tamarind paste, brown sugar, and salt.
- Cook over low heat for 3 hours, stirring occasionally, until the beef is tender and the sauce is thick and flavorful.
- Preheat the oven to 350°F (175°C).
- Spread the tortilla chips on a baking sheet and sprinkle with the shredded cheddar cheese.
- Bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with the rendang beef, diced tomatoes, sliced jalapenos, and chopped cilantro.
- Serve immediately and enjoy!
