Rendang Nachos

Ingredients

  • 1 lb beef, thinly sliced
  • 2 cups coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 1 inch galangal, grated
  • 2 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 1 tsp turmeric powder
  • 1 tsp tamarind paste
  • 1 tsp brown sugar
  • Salt to taste
  • 1 bag of tortilla chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapenos
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, combine the beef, coconut milk, shallots, garlic, red chilies, galangal, lemongrass, kaffir lime leaves, turmeric powder, tamarind paste, brown sugar, and salt.
  2. Cook over low heat for 3 hours, stirring occasionally, until the beef is tender and the sauce is thick and flavorful.
  3. Preheat the oven to 350°F (175°C).
  4. Spread the tortilla chips on a baking sheet and sprinkle with the shredded cheddar cheese.
  5. Bake for 5-7 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and top with the rendang beef, diced tomatoes, sliced jalapenos, and chopped cilantro.
  7. Serve immediately and enjoy!
