Rendang Rhapsody
Rendang Rhapsody is a traditional Javanese dish that is rich in flavor and history. This slow-cooked meat dish is infused with a blend of aromatic spices, resulting in a tender and fragrant delicacy that will transport you to the heart of Indonesia.
Ingredients
- 1 kg beef, cut into cubes
- 4 cups coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 3 red chilies, sliced
- 2 Tbsp tamarind paste
- 2 Tbsp brown sugar
- Salt to taste
Instructions
- In a large pot, combine the beef, coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies.
- Place the pot over medium heat and bring the mixture to a boil. Then, reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
- Add the tamarind paste, brown sugar, and salt. Continue to simmer for another hour, or until the beef is tender and the sauce has thickened.
- Once done, remove the pot from the heat and let it rest for a few minutes before serving.
