Rendang Sapi Pedas (spicy Beef Rendang)

Ingredients

  • 2 lbs beef, cut into cubes
  • 4 cups coconut milk
  • 5 shallots
  • 4 cloves garlic
  • 3 red chilies
  • 2 lemongrass stalks
  • 5 kaffir lime leaves
  • 1 inch galangal
  • 1 inch ginger
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 tsp sugar

Instructions

  1. Grind the shallots, garlic, red chilies, lemongrass, galangal, and ginger into a paste.
  2. In a pot, combine the beef, coconut milk, spice paste, kaffir lime leaves, turmeric powder, coriander powder, cumin powder, salt, and sugar.
  3. Cook over low heat for 3 hours, stirring occasionally, until the sauce thickens and the beef is tender.
