Rendang Sapi Pedas is a traditional spicy beef dish from the Sundanese cuisine of Indonesia. It is known for its rich and flavorful coconut milk-based sauce, infused with a blend of aromatic spices.
Ingredients
- 2 lbs beef, cut into cubes
- 4 cups coconut milk
- 5 shallots
- 4 cloves garlic
- 3 red chilies
- 2 lemongrass stalks
- 5 kaffir lime leaves
- 1 inch galangal
- 1 inch ginger
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp salt
- 1 tsp sugar
Instructions
- Grind the shallots, garlic, red chilies, lemongrass, galangal, and ginger into a paste.
- In a pot, combine the beef, coconut milk, spice paste, kaffir lime leaves, turmeric powder, coriander powder, cumin powder, salt, and sugar.
- Cook over low heat for 3 hours, stirring occasionally, until the sauce thickens and the beef is tender.
