Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup coconut milk
- 1/2 cup water
- 2 tbsp Rendang curry paste
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic, and cook until the onion is soft.
- Stir in the Rendang curry paste, coconut milk, and water. Simmer for 1-1.5 hours until the beef is tender and the sauce is thickened.
- Preheat the oven to 375°F (190°C).
- Transfer the Rendang mixture to a baking dish.
- Spoon the mashed potatoes over the top and spread them out evenly.
- Sprinkle the shredded cheddar cheese over the mashed potatoes.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
