Rendang Shepherd's Pie

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup coconut milk
  • 1/2 cup water
  • 2 tbsp Rendang curry paste
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic, and cook until the onion is soft.
  3. Stir in the Rendang curry paste, coconut milk, and water. Simmer for 1-1.5 hours until the beef is tender and the sauce is thickened.
  4. Preheat the oven to 375°F (190°C).
  5. Transfer the Rendang mixture to a baking dish.
  6. Spoon the mashed potatoes over the top and spread them out evenly.
  7. Sprinkle the shredded cheddar cheese over the mashed potatoes.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving.
