Reuben Egg Rolls

Ingredients

  • 12 egg roll wrappers
  • 1/2 pound thinly sliced corned beef
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1/4 cup Thousand Island dressing
  • 1 egg, beaten (for sealing the egg rolls)
  • Oil for frying

Instructions

  1. Preheat the oil in a large skillet over medium heat.
  2. Lay an egg roll wrapper on a clean, dry surface.
  3. Place a small amount of corned beef, sauerkraut, and Swiss cheese in the center of the wrapper.
  4. Drizzle a small amount of Thousand Island dressing over the filling.
  5. Roll the bottom of the wrapper over the filling, then fold in the sides, and continue rolling to seal the egg roll with the beaten egg.
  6. Repeat with the remaining wrappers and filling.
  7. Fry the egg rolls in the hot oil until golden brown and crispy, about 3-4 minutes per side.
  8. Remove the egg rolls from the oil and drain on paper towels.
  9. Serve the Reuben egg rolls hot with additional Thousand Island dressing for dipping.
