Reuben Egg Rolls

Ingredients
- 12 egg roll wrappers
- 1/2 pound thinly sliced corned beef
- 1 cup sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1/4 cup Thousand Island dressing
- 1 egg, beaten (for sealing the egg rolls)
- Oil for frying
Instructions
- Preheat the oil in a large skillet over medium heat.
- Lay an egg roll wrapper on a clean, dry surface.
- Place a small amount of corned beef, sauerkraut, and Swiss cheese in the center of the wrapper.
- Drizzle a small amount of Thousand Island dressing over the filling.
- Roll the bottom of the wrapper over the filling, then fold in the sides, and continue rolling to seal the egg roll with the beaten egg.
- Repeat with the remaining wrappers and filling.
- Fry the egg rolls in the hot oil until golden brown and crispy, about 3-4 minutes per side.
- Remove the egg rolls from the oil and drain on paper towels.
- Serve the Reuben egg rolls hot with additional Thousand Island dressing for dipping.
