Revithia Me Spanaki
Revithia me spanaki is a traditional Greek dish that combines tender chickpeas with flavorful spinach, creating a hearty and nutritious meal.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 pound fresh spinach, washed and chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Drain the soaked chickpeas and rinse them under cold water.
- In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened.
- Add the chickpeas to the pot and cover with water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the chickpeas are tender.
- Stir in the chopped spinach, oregano, and cumin. Cook for an additional 5-10 minutes until the spinach is wilted.
- Season with salt and pepper to taste.
