Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 pound fresh spinach, washed and chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Drain the soaked chickpeas and rinse them under cold water.
  2. In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened.
  3. Add the chickpeas to the pot and cover with water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the chickpeas are tender.
  4. Stir in the chopped spinach, oregano, and cumin. Cook for an additional 5-10 minutes until the spinach is wilted.
  5. Season with salt and pepper to taste.
