Rewena Bread (maori Rewena Bread)
Rewena Bread, also known as Maori Rewena Bread, is a traditional bread from the indigenous Maori people of New Zealand. It is leavened with a natural starter called "rewena" made from fermented potatoes, which gives the bread a unique tangy flavor and a slightly dense texture. This recipe is a wonderful way to experience the flavors of Australasian cuisine and the cultural heritage of the Maori people.
Ingredients
- 4 medium potatoes, peeled and grated
- 4 cups flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 cups warm water
Instructions
- In a large bowl, mix the grated potatoes with 2 cups of flour. Cover the bowl with a clean cloth and let it sit at room temperature for 2-3 days, stirring once a day.
- After the potato mixture has fermented, add the remaining flour, sugar, salt, and warm water. Mix to form a dough.
- Knead the dough on a floured surface for 10-15 minutes until smooth and elastic. Place the dough back in the bowl, cover, and let it rise for 1-2 hours.
- Preheat the oven to 180°C (350°F). Shape the dough into a loaf and place it on a greased baking sheet. Let it rise for another 30 minutes.
- Bake the bread for 45-50 minutes until golden brown and hollow-sounding when tapped on the bottom. Let it cool before slicing.
