Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup Rheingau Riesling wine
- 3 large eggs
- 1/2 cup granulated sugar
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine the flour, cold butter, 1/4 cup of sugar, and salt. Pulse until the mixture resembles coarse crumbs.
- Add the Riesling wine and pulse until the dough comes together.
- Press the dough into a 9-inch tart pan, covering the bottom and sides. Prick the bottom with a fork and bake for 15 minutes, or until lightly golden. Let it cool.
- In a bowl, whisk together the eggs, 1/2 cup of sugar, heavy cream, and vanilla extract. Pour the mixture into the cooled tart shell.
- Bake for 25-30 minutes, or until the filling is set and the top is lightly golden. Let it cool before serving.
