Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup Rheingau Riesling wine
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, combine the flour, cold butter, 1/4 cup of sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  3. Add the Riesling wine and pulse until the dough comes together.
  4. Press the dough into a 9-inch tart pan, covering the bottom and sides. Prick the bottom with a fork and bake for 15 minutes, or until lightly golden. Let it cool.
  5. In a bowl, whisk together the eggs, 1/2 cup of sugar, heavy cream, and vanilla extract. Pour the mixture into the cooled tart shell.
  6. Bake for 25-30 minutes, or until the filling is set and the top is lightly golden. Let it cool before serving.
