Rhenish-Hessian Cheese Spaetzle (Rhenish-Hessische Käsespätzle)
Rhenish-Hessische Käsespätzle, or Rhenish-Hessian Cheese Spaetzle, is a traditional dish from the Rhenish-Hessian region of Germany. This hearty and comforting meal features homemade spaetzle noodles smothered in a creamy cheese sauce, topped with crispy onions.
Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 cup grated Emmental cheese
- 1/2 cup grated Gruyère cheese
- 1/4 cup butter
- 2 onions, thinly sliced
Instructions
- In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes into the boiling water.
- Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and place them in a colander to drain.
- In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until golden and crispy. Remove the onions from the skillet and set aside.
- Add the cooked spaetzle to the skillet with the remaining butter. Sprinkle the grated cheeses over the spaetzle and stir until the cheese is melted and the spaetzle is coated.
- Transfer the cheesy spaetzle to a serving dish and top with the crispy onions. Serve hot and enjoy!
