Rhenish-Hessian Cheese Spaetzle (Rhenish-Hessische Käsespätzle)

Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 cup grated Emmental cheese
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup butter
  • 2 onions, thinly sliced

Instructions

  1. In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
  2. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes into the boiling water.
  3. Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and place them in a colander to drain.
  4. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until golden and crispy. Remove the onions from the skillet and set aside.
  5. Add the cooked spaetzle to the skillet with the remaining butter. Sprinkle the grated cheeses over the spaetzle and stir until the cheese is melted and the spaetzle is coated.
  6. Transfer the cheesy spaetzle to a serving dish and top with the crispy onions. Serve hot and enjoy!
