Rice And Lentil Porridge (khicede)

Ingredients

  • 1 cup rice
  • 1/2 cup lentils
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 inch ginger, grated
  • 2-3 garlic cloves, minced
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 4 cups water
  • 2 tbsp ghee (clarified butter)

Instructions

  1. Wash the rice and lentils together and soak them for 15-20 minutes.
  2. Heat ghee in a pot and add cumin seeds. Once they splutter, add the chopped onions, ginger, and garlic. Sauté until the onions turn golden brown.
  3. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
  4. Drain the soaked rice and lentils and add them to the pot. Sauté for 2-3 minutes.
  5. Pour in the water and bring the mixture to a boil. Then, reduce the heat and let it simmer for 20-25 minutes or until the rice and lentils are cooked and the porridge reaches the desired consistency.
  6. Adjust the seasoning if needed and serve hot.
