Ingredients
- 1 cup basmati rice
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 lb bone-in chicken pieces
- 6 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced tomatoes and cook for a few minutes until they begin to break down.
- Add the chicken pieces to the pot and brown them on all sides.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let the soup simmer for 20-25 minutes until the chicken is fully cooked.
- While the soup is simmering, rinse the basmati rice under cold water until the water runs clear. Drain the rice and set it aside.
- Once the chicken is cooked, remove it from the pot and shred the meat. Return the shredded chicken to the soup.
- Stir in the cumin, turmeric, salt, and pepper. Then add the rinsed rice to the pot.
- Cover the pot and let the rice cook in the soup for 15-20 minutes, or until it is tender.
- Adjust the seasoning if needed and serve the Bariis iyo Maraq hot, garnished with fresh cilantro.
