Ingredients
- 2 cups of rice
- 1 cup of groundnuts (peanuts)
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 teaspoon of paprika
- 4 cups of water
- Salt to taste
Instructions
- Wash the rice and place it in a pot with 4 cups of water. Cook until the rice is tender and sticky.
- While the rice is cooking, prepare the groundnut sauce. In a blender, blend the groundnuts with 2 cups of water until smooth.
- Heat a large saucepan over medium heat and add the chopped onion, garlic, and ginger. Sauté until the onions are translucent.
- Add the diced tomatoes and paprika to the saucepan. Cook for 5 minutes, stirring occasionally.
- Pour the blended groundnut mixture into the saucepan and stir to combine. Simmer for 15-20 minutes, stirring occasionally, until the sauce thickens.
- Once the rice is cooked, let it cool slightly. Then, wet your hands and shape the rice into small balls.
- Serve the rice balls with the warm groundnut sauce.
