Rice Flatbread, also known as Akki Roti, is a popular dish from Karnataka Cuisine. It is a gluten-free flatbread made with rice flour and flavored with spices and herbs.
Ingredients
- 2 cups rice flour
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon cumin seeds
- Salt to taste
- Water as needed
Instructions
- In a mixing bowl, combine the rice flour, chopped onion, green chilies, cilantro, cumin seeds, and salt.
- Add water gradually and knead the mixture into a soft dough.
- Divide the dough into equal-sized balls and flatten them into thin round discs using your hands.
- Heat a griddle or non-stick pan over medium heat and place the flattened dough discs on it.
- Cook the rice flatbread on both sides until golden brown, adding a little oil around the edges.
- Serve hot with chutney, pickle, or yogurt.
