Rice Flour Pancakes (chakuli Pitha)

Ingredients

  • 2 cups rice flour
  • 1/2 cup grated coconut
  • 1/2 cup finely chopped onion
  • 2-3 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Water as needed
  • Oil for frying

Instructions

  1. In a mixing bowl, combine rice flour, grated coconut, chopped onion, green chilies, cumin seeds, turmeric powder, and salt.
  2. Add water gradually and mix to form a smooth batter with a pouring consistency.
  3. Heat a non-stick pan or griddle and grease it with oil.
  4. Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin pancake.
  5. Drizzle some oil around the edges and cook until the bottom is golden and crispy.
  6. Flip the pancake and cook the other side until golden and crispy.
  7. Remove from the pan and repeat with the remaining batter.
  8. Serve the rice flour pancakes hot with chutney or curry of your choice.
