Ingredients

  • 1/2 cup crushed chicharron (pork rinds)

  • Lemon or calamansi wedges for serving

Instructions

  1. Boil the rice noodles according to package instructions, then set aside.
  2. In a saucepan, combine the shrimp stock, annatto oil, and fish sauce. Bring to a simmer.
  3. Add the shrimp to the saucepan and cook until they turn pink. Remove the shrimp and set aside.
  4. In a small bowl, mix the cornstarch and water to create a slurry. Pour the slurry into the saucepan and stir until the sauce thickens.
