Ingredients
- 2 cups rice flour
- 1/2 cup grated coconut
- 1/2 cup jaggery (or sugar)
- 1/2 tsp cardamom powder
- 1/4 tsp salt
- Water, as needed
- Oil, for cooking
Instructions
- In a mixing bowl, combine the rice flour, grated coconut, jaggery, cardamom powder, and salt.
- Add water gradually and mix to form a smooth batter with a pouring consistency.
- Heat a non-stick pan over medium heat and lightly grease it with oil.
- Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin pancake.
- Cook for 2-3 minutes on each side until golden brown, adding more oil if needed.
- Repeat with the remaining batter to make more pancakes.
- Serve the rice pancakes warm with a cup of tea or your favorite chutney.
