Ingredients
- 2 cups rice flour
- 1 cup mixed vegetables (peas, carrots, beans)
- 4 potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Oil for frying
Instructions
- In a bowl, mix the rice flour with water to make a smooth batter. Set aside.
- Boil the mixed vegetables until they are soft. Drain and mash them coarsely.
- Heat oil in a pan, add cumin seeds, chopped onion, and green chilies. Sauté until the onions are golden brown.
- Add the mashed vegetables, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 5 minutes. Set aside.
- In a separate bowl, mix the boiled and mashed potatoes with salt and garam masala.
- Take a portion of the rice flour batter and spread it on a hot griddle to make a pancake. Cook until both sides are golden brown.
- Serve the rice pancakes with the spicy mashed vegetables and potatoes on the side.
