Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 cup chopped green onions
  • 1/4 teaspoon black pepper

Instructions

  1. In a large skillet, heat 1 tablespoon of oil over medium heat.
  2. Add the diced onions and cook until they are translucent.
  3. Add the mixed vegetables and garlic, and cook until the vegetables are tender.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.
  5. Scramble the eggs until they are cooked through, then mix them with the vegetables.
  6. Add the cooked rice, soy sauce, sesame oil, green onions, and black pepper to the skillet.
  7. Cook, stirring constantly, until everything is heated through.
  8. Remove from heat and serve hot.
