Rice Patty

Ingredients
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/4 cup chopped green onions
- 1/4 teaspoon black pepper
Instructions
- In a large skillet, heat 1 tablespoon of oil over medium heat.
- Add the diced onions and cook until they are translucent.
- Add the mixed vegetables and garlic, and cook until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.
- Scramble the eggs until they are cooked through, then mix them with the vegetables.
- Add the cooked rice, soy sauce, sesame oil, green onions, and black pepper to the skillet.
- Cook, stirring constantly, until everything is heated through.
- Remove from heat and serve hot.
