Rice Pilaf Skewers (plov Shashlik)

Ingredients

  • 1 lb lamb or beef, cut into cubes
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup carrots, grated
  • 1/2 cup raisins
  • 1/4 cup vegetable oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 cups chicken or beef broth
  • Wooden skewers, soaked in water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the meat cubes and cook until browned on all sides.
  3. Stir in the rice, carrots, raisins, cumin, paprika, salt, and pepper. Cook for 2-3 minutes.
  4. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Thread the rice pilaf and meat onto the soaked skewers, alternating between the two.
  6. Preheat a grill or grill pan over medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until the meat is cooked to your desired doneness.
  7. Serve the rice pilaf skewers hot and enjoy!
