Rice Pilaf Skewers (plov Shashlik)
Rice Pilaf Skewers, also known as Plov Shashlik, are a popular dish in Kazakh cuisine. These skewers are made with flavorful rice pilaf and tender pieces of meat, perfect for grilling and enjoying with friends and family.
Ingredients
- 1 lb lamb or beef, cut into cubes
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup carrots, grated
- 1/2 cup raisins
- 1/4 cup vegetable oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 4 cups chicken or beef broth
- Wooden skewers, soaked in water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the meat cubes and cook until browned on all sides.
- Stir in the rice, carrots, raisins, cumin, paprika, salt, and pepper. Cook for 2-3 minutes.
- Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Thread the rice pilaf and meat onto the soaked skewers, alternating between the two.
- Preheat a grill or grill pan over medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until the meat is cooked to your desired doneness.
- Serve the rice pilaf skewers hot and enjoy!
