Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (almonds, pistachios, cashews)

Instructions

  1. Wash the rice and soak it in water for 30 minutes.
  2. In a heavy-bottomed pan, bring the milk to a boil.
  3. Drain the soaked rice and add it to the boiling milk. Cook on low heat, stirring occasionally, until the rice is soft and the mixture has thickened, about 30-40 minutes.
  4. Add sugar, cardamom powder, and chopped nuts. Cook for another 5 minutes.
  5. Remove from heat and let it cool. The kheer will thicken as it cools.
  6. Refrigerate for a few hours before serving.
