Rice Pudding From Bhojpuri Cuisine (bhojpuri Chawal Ki Kheer)
Rice pudding, also known as Chawal Ki Kheer, is a popular dessert in Bhojpuri cuisine. This creamy and aromatic dessert is made with rice, milk, and sugar, and flavored with cardamom and nuts.
Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
Instructions
- Wash the rice and soak it in water for 30 minutes.
- In a heavy-bottomed pan, bring the milk to a boil.
- Drain the soaked rice and add it to the boiling milk. Cook on low heat, stirring occasionally, until the rice is soft and the mixture has thickened, about 30-40 minutes.
- Add sugar, cardamom powder, and chopped nuts. Cook for another 5 minutes.
- Remove from heat and let it cool. The kheer will thicken as it cools.
- Refrigerate for a few hours before serving.
