Rice Pudding (punjabi Kheer)
Rice pudding, also known as Punjabi Kheer, is a popular dessert in Punjabi cuisine. It is a creamy and aromatic rice pudding that is flavored with cardamom and garnished with nuts.
Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
Instructions
- Wash the rice and soak it in water for 30 minutes.
- In a heavy-bottomed pan, bring the milk to a boil.
- Drain the rice and add it to the boiling milk. Simmer on low heat, stirring occasionally, until the rice is cooked and the mixture thickens, about 45-50 minutes.
- Add sugar and cardamom powder, and cook for an additional 10 minutes.
- Remove from heat and let it cool. Garnish with chopped nuts before serving.
