Ingredients

  • 2 cups of basmati rice
  • 500g of chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 2 cups of chicken broth
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 cinnamon stick
  • 4 cardamom pods
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. Stir in the turmeric, cumin, and coriander powder, and cook for another 2 minutes to toast the spices.
  4. Add the basmati rice to the pot and stir to coat the grains with the spices.
  5. Pour in the chicken broth and add the cinnamon stick and cardamom pods. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is cooked and the chicken is tender.
  7. Once done, fluff the rice with a fork and remove the cinnamon stick and cardamom pods.
  8. Transfer the rice and chicken to a serving platter, garnish with fresh cilantro, and serve hot.
