Ingredients
- 2 cups of basmati rice
- 500g of chicken, cut into pieces
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 cups of chicken broth
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 cinnamon stick
- 4 cardamom pods
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the turmeric, cumin, and coriander powder, and cook for another 2 minutes to toast the spices.
- Add the basmati rice to the pot and stir to coat the grains with the spices.
- Pour in the chicken broth and add the cinnamon stick and cardamom pods. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is cooked and the chicken is tender.
- Once done, fluff the rice with a fork and remove the cinnamon stick and cardamom pods.
- Transfer the rice and chicken to a serving platter, garnish with fresh cilantro, and serve hot.
