Rice With Duck (arroz Con Pato)

Ingredients
- 2 lbs duck, cut into pieces
- 2 cups rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tomato, chopped
- 1/2 cup peas
- 4 cups chicken broth
- 1/2 cup white wine
- 1 teaspoon paprika
- 1/2 teaspoon saffron threads
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the duck pieces with salt, pepper, and paprika.
- Heat olive oil in a large pot over medium heat. Brown the duck pieces on all sides. Remove and set aside.
- In the same pot, sauté the onion, garlic, and bell peppers until softened.
- Add the tomato, peas, rice, saffron, and white wine. Stir to combine.
- Return the duck pieces to the pot and pour in the chicken broth. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the rice is cooked and the duck is tender.
- Adjust seasoning with salt and pepper if needed. Serve hot and enjoy!
