Rice With Duck (arroz Con Pato)

Ingredients

  • 2 lbs duck, cut into pieces
  • 2 cups rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tomato, chopped
  • 1/2 cup peas
  • 4 cups chicken broth
  • 1/2 cup white wine
  • 1 teaspoon paprika
  • 1/2 teaspoon saffron threads
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the duck pieces with salt, pepper, and paprika.
  2. Heat olive oil in a large pot over medium heat. Brown the duck pieces on all sides. Remove and set aside.
  3. In the same pot, sauté the onion, garlic, and bell peppers until softened.
  4. Add the tomato, peas, rice, saffron, and white wine. Stir to combine.
  5. Return the duck pieces to the pot and pour in the chicken broth. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the rice is cooked and the duck is tender.
  6. Adjust seasoning with salt and pepper if needed. Serve hot and enjoy!
