Ingredients

  • 1 lb goat meat, cut into cubes

  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp cloves
  • 1/4 tsp black pepper
  • 4 cups chicken or beef broth
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
  2. Add the goat meat to the pot and cook until browned on all sides.
  3. Stir in the diced tomatoes, minced garlic, and all the spices. Cook for a few minutes until the tomatoes are softened.
  4. Wash the basmati rice under cold water until the water runs clear. Drain the rice and add it to the pot, stirring to combine with the meat and spices.
  5. Pour in the chicken or beef broth and season with salt. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Once the rice is cooked, fluff it with a fork and let it rest for a few minutes before serving.
