Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 6 cups beef or chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix the ground beef with half of the chopped onion, minced garlic, cumin, coriander, turmeric, salt, and pepper. Form the mixture into small meatballs.
  2. In a large pot, heat some oil over medium heat and brown the meatballs on all sides. Remove the meatballs and set aside.
  3. In the same pot, sauté the remaining chopped onion until translucent. Add the chopped tomatoes and cook until they soften.
  4. Add the uncooked rice to the pot and stir to coat it with the onion and tomato mixture.
  5. Pour in the beef or chicken broth and bring the soup to a boil. Reduce the heat, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked.
  6. Return the meatballs to the pot and let them heat through. Adjust the seasoning with salt and pepper if needed.
  7. Serve the rice with meatball soup hot, garnished with fresh cilantro.
