Rice With Tomato Sauce (somali Bariis Iyo Suugo)
This Somali rice dish, known as Bariis, is served with a flavorful tomato sauce called Suugo. It's a comforting and aromatic meal that is perfect for sharing with family and friends.
Ingredients
- 2 cups basmati rice
- 4 cups water
- 1 onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 cup vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat the vegetable oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic, diced tomatoes, cumin, paprika, turmeric, and salt. Cook for 5 minutes, stirring occasionally.
- Add the rinsed rice to the pot and stir to combine with the tomato mixture.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
