Rice With Tomato Sauce (somali Bariis Iyo Suugo)

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 cup vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat the vegetable oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic, diced tomatoes, cumin, paprika, turmeric, and salt. Cook for 5 minutes, stirring occasionally.
  4. Add the rinsed rice to the pot and stir to combine with the tomato mixture.
  5. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and garnish with fresh cilantro before serving.
