ಬಾದಂ ಹಾಲು (Badam Milk) is a rich and creamy Indian beverage that is perfect for any occasion. This traditional Udupi Cuisine recipe is made with almonds, milk, and a blend of aromatic spices, making it a delicious and nutritious drink.
Ingredients
- 1 cup almonds, blanched and peeled
- 4 cups milk
- 1/2 cup sugar
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands
- 1 tablespoon chopped pistachios for garnish
Instructions
- Soak the blanched almonds in warm water for 10 minutes.
- Drain the water and blend the almonds with 1 cup of milk to a smooth paste.
- Heat the remaining milk in a pan and bring it to a boil.
- Add the almond paste, sugar, cardamom powder, and saffron strands to the boiling milk.
- Simmer the mixture for 10-15 minutes, stirring occasionally, until it thickens.
- Turn off the heat and let the badam milk cool to room temperature.
- Refrigerate the badam milk for a few hours until chilled.
- Serve the rich and creamy badam milk garnished with chopped pistachios.
