Rich and Creamy Badam Milk (ಬಾದಂ ಹಾಲು)

Ingredients

  • 1 cup almonds, blanched and peeled
  • 4 cups milk
  • 1/2 cup sugar
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands
  • 1 tablespoon chopped pistachios for garnish

Instructions

  1. Soak the blanched almonds in warm water for 10 minutes.
  2. Drain the water and blend the almonds with 1 cup of milk to a smooth paste.
  3. Heat the remaining milk in a pan and bring it to a boil.
  4. Add the almond paste, sugar, cardamom powder, and saffron strands to the boiling milk.
  5. Simmer the mixture for 10-15 minutes, stirring occasionally, until it thickens.
  6. Turn off the heat and let the badam milk cool to room temperature.
  7. Refrigerate the badam milk for a few hours until chilled.
  8. Serve the rich and creamy badam milk garnished with chopped pistachios.
