Rich and Creamy Payasam (ಪಾಯಸ)
ಪಾಯಸ (Rich and Creamy Payasam) is a traditional South Indian dessert that is made during festivals and special occasions. This delicious sweet dish is made with rice, milk, sugar, and flavored with cardamom and garnished with nuts.

Ingredients
- 1 cup raw rice
- 4 cups milk
- 1 cup sugar
- 1/4 tsp cardamom powder
- 2 tbsp ghee
- 10-12 cashew nuts
- 10-12 raisins
Instructions
- Wash the rice and soak it in water for 30 minutes.
- Boil the milk in a heavy-bottomed pan.
- Drain the water from the rice and add the rice to the boiling milk.
- Cook on low heat, stirring occasionally, until the rice is fully cooked and the mixture thickens.
- Add sugar and cardamom powder, and mix well.
- In a separate pan, heat ghee and fry the cashew nuts and raisins until golden brown.
- Add the fried nuts and raisins to the payasam and mix well.
- Simmer for a few more minutes and then remove from heat.
- Delicious ಪಾಯಸ (Rich and Creamy Payasam) is ready to be served hot or cold.
