Ingredients

  • 500g ricotta cheese
  • 1 cup sugar
  • 4 eggs
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, mix the ricotta cheese and sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the flour, vanilla extract, and lemon zest.
  4. If using, fold in the raisins and chopped walnuts.
  5. Pour the mixture into the prepared pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 1 hour, or until the center is set and the top is golden brown.
  7. Allow the cheesecake to cool in the pan for 10 minutes, then remove the sides of the pan and let it cool completely before serving.
