Ingredients
- 500g ricotta cheese
- 1 cup sugar
- 4 eggs
- 1/4 cup all-purpose flour
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1/4 cup raisins (optional)
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- In a large bowl, mix the ricotta cheese and sugar until smooth.
- Beat in the eggs, one at a time, then stir in the flour, vanilla extract, and lemon zest.
- If using, fold in the raisins and chopped walnuts.
- Pour the mixture into the prepared pan and smooth the top with a spatula.
- Bake in the preheated oven for 1 hour, or until the center is set and the top is golden brown.
- Allow the cheesecake to cool in the pan for 10 minutes, then remove the sides of the pan and let it cool completely before serving.
