Ridge Gourd Lentil Curry (savory Hirekai Sambar)
Ridge Gourd Lentil Curry, also known as Savory Hirekai Sambar, is a traditional dish from Uttara Karnataka Cuisine. This flavorful and nutritious curry is made with ridge gourd, lentils, and a blend of aromatic spices.
Ingredients
- 2 ridge gourds, peeled and chopped
- 1 cup toor dal (split pigeon peas)
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 tsp turmeric powder
- 1 tbsp sambar powder
- 1 tsp tamarind paste
- 2-3 green chilies, slit
- 1 sprig curry leaves
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- Pinch of asafoetida (hing)
- Salt to taste
Instructions
- Pressure cook the toor dal with turmeric powder and 2 cups of water until soft.
- In a large pot, heat oil and add mustard seeds. Once they splutter, add cumin seeds, asafoetida, and curry leaves.
- Add chopped onions and sauté until they turn translucent.
- Add chopped tomatoes and cook until they turn mushy.
- Add the chopped ridge gourd, sambar powder, green chilies, and salt. Mix well and cook for a few minutes.
- Add the cooked toor dal and tamarind paste. Mix everything and let it simmer for 10-15 minutes.
- Adjust the consistency by adding water if needed. Bring the curry to a gentle boil and remove from heat.
- Serve the ridge gourd lentil curry hot with steamed rice or idli.
