Ridge Gourd Lentil Curry, also known as Savory Hirekai Sambar, is a traditional dish from Uttara Karnataka Cuisine. This flavorful and nutritious curry is made with ridge gourd, lentils, and a blend of aromatic spices.

Ridge Gourd Lentil Curry (savory Hirekai Sambar)

Ingredients

  • 2 ridge gourds, peeled and chopped
  • 1 cup toor dal (split pigeon peas)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tsp turmeric powder
  • 1 tbsp sambar powder
  • 1 tsp tamarind paste
  • 2-3 green chilies, slit
  • 1 sprig curry leaves
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Pinch of asafoetida (hing)
  • Salt to taste

Instructions

  1. Pressure cook the toor dal with turmeric powder and 2 cups of water until soft.
  2. In a large pot, heat oil and add mustard seeds. Once they splutter, add cumin seeds, asafoetida, and curry leaves.
  3. Add chopped onions and sauté until they turn translucent.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add the chopped ridge gourd, sambar powder, green chilies, and salt. Mix well and cook for a few minutes.
  6. Add the cooked toor dal and tamarind paste. Mix everything and let it simmer for 10-15 minutes.
  7. Adjust the consistency by adding water if needed. Bring the curry to a gentle boil and remove from heat.
  8. Serve the ridge gourd lentil curry hot with steamed rice or idli.
