Ridge Gourd Tamarind Curry, also known as Hirekai Gojju, is a popular dish from the Uttara Karnataka Cuisine. This tangy and spicy curry is made with ridge gourd, tamarind, and a blend of aromatic spices, making it a delightful addition to any meal.
Ingredients
- 2 ridge gourds, peeled and chopped
- 1 lemon-sized tamarind ball, soaked in water
- 1 tablespoon jaggery
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 sprig curry leaves
- 1/2 teaspoon turmeric powder
- Salt to taste
- Water
Instructions
- Extract the tamarind pulp from the soaked tamarind and keep it aside.
- Heat oil in a pan and add mustard seeds. Once they start to splutter, add cumin seeds and curry leaves.
- Add the chopped ridge gourd, turmeric powder, and salt. Mix well and cook for 5 minutes.
- Pour in the tamarind pulp, add jaggery, and mix thoroughly. Add water if needed to adjust the consistency of the curry.
- Cover and cook the curry for another 10-15 minutes until the ridge gourd is tender and the flavors are well combined.
- Once done, remove from heat and serve hot with steamed rice or roti.
