Ridge Gourd Tamarind Curry (lip-smacking Hirekai Gojju)

Ingredients

  • 2 ridge gourds, peeled and chopped
  • 1 lemon-sized tamarind ball, soaked in water
  • 1 tablespoon jaggery
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 sprig curry leaves
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Water

Instructions

  1. Extract the tamarind pulp from the soaked tamarind and keep it aside.
  2. Heat oil in a pan and add mustard seeds. Once they start to splutter, add cumin seeds and curry leaves.
  3. Add the chopped ridge gourd, turmeric powder, and salt. Mix well and cook for 5 minutes.
  4. Pour in the tamarind pulp, add jaggery, and mix thoroughly. Add water if needed to adjust the consistency of the curry.
  5. Cover and cook the curry for another 10-15 minutes until the ridge gourd is tender and the flavors are well combined.
  6. Once done, remove from heat and serve hot with steamed rice or roti.
