Riesling Mousse (rieslingmousse)

Ingredients

  • 1 cup Riesling wine
  • 1/2 cup sugar
  • 3 egg yolks
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the Riesling and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool.
  2. In a bowl, whisk the egg yolks. Gradually pour the cooled Riesling mixture into the egg yolks, whisking constantly.
  3. Transfer the mixture back to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and let it cool completely.
  4. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  5. Gently fold the cooled Riesling mixture into the whipped cream until well combined.
  6. Divide the mousse into serving glasses and refrigerate for at least 4 hours, or until set.
