Riesling Mousse (rieslingmousse)

Ingredients
- 1 cup Riesling wine
- 1/2 cup sugar
- 3 egg yolks
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the Riesling and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool.
- In a bowl, whisk the egg yolks. Gradually pour the cooled Riesling mixture into the egg yolks, whisking constantly.
- Transfer the mixture back to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and let it cool completely.
- In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the cooled Riesling mixture into the whipped cream until well combined.
- Divide the mousse into serving glasses and refrigerate for at least 4 hours, or until set.
