Instructions

  1. In a large pot, combine the Riesling, sugar, cinnamon stick, vanilla bean, and lemon zest. Bring the mixture to a simmer over medium heat, stirring until the sugar is dissolved.
  2. Add the pears to the pot, making sure they are fully submerged in the liquid. If necessary, add more Riesling or water to cover the pears.
  3. Cover the pot and let the pears simmer for 20-30 minutes, or until they are tender when pierced with a knife. Turn the pears occasionally to ensure even poaching.
  4. Once the pears are cooked, remove them from the poaching liquid and set aside to cool slightly.
  5. Continue to simmer the poaching liquid until it is reduced by half and has a syrupy consistency.
  6. To serve, place a pear on each plate and drizzle with the reduced poaching liquid. Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
