Ingredients
- 4 ripe but firm pears, peeled and cored
- 1 bottle of Riesling wine
- 1 cup granulated sugar
- 1 cinnamon stick
- 1 vanilla bean, split lengthwise
- Zest of 1 lemon
- Whipped cream or vanilla ice cream, for serving
Instructions
- In a large pot, combine the Riesling, sugar, cinnamon stick, vanilla bean, and lemon zest. Bring the mixture to a simmer over medium heat, stirring until the sugar is dissolved.
- Add the pears to the pot, making sure they are fully submerged in the liquid. If necessary, add more Riesling or water to cover the pears.
- Cover the pot and let the pears simmer for 20-30 minutes, or until they are tender when pierced with a knife. Turn the pears occasionally to ensure even poaching.
- Once the pears are cooked, remove them from the poaching liquid and set aside to cool slightly.
- Continue to simmer the poaching liquid until it is reduced by half and has a syrupy consistency.
- To serve, place a pear on each plate and drizzle with the reduced poaching liquid. Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
