Rihaakuru Bodu Mas (jackfruit Curry)

Ingredients

  • 2 cups ripe jackfruit, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 1 green chili, sliced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon fennel seeds
  • 1/2 cup coconut milk
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the fennel seeds and let them sizzle for a few seconds.
  3. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  4. Add the diced tomatoes and green chili. Cook until the tomatoes are soft and pulpy.
  5. Stir in the turmeric powder, chili powder, cumin powder, and coriander powder. Cook for a minute to toast the spices.
  6. Add the jackfruit chunks and mix well with the spice mixture.
  7. Pour in the coconut milk and season with salt. Stir to combine all the ingredients.
  8. Cover the pot and let the curry simmer for 20-25 minutes, or until the jackfruit is tender.
  9. Garnish with fresh coriander leaves before serving.
