Rihaakuru Bodu Mas (jackfruit Curry)
Rihaakuru Bodu Mas, or Jackfruit Curry, is a traditional dish from Maldivian cuisine that is bursting with rich flavors and aromatic spices. This hearty and comforting curry is perfect for a cozy family dinner or a special gathering with friends.
Ingredients
- 2 cups ripe jackfruit, cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 1 green chili, sliced
- 1/2 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon fennel seeds
- 1/2 cup coconut milk
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves for garnish
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the fennel seeds and let them sizzle for a few seconds.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the diced tomatoes and green chili. Cook until the tomatoes are soft and pulpy.
- Stir in the turmeric powder, chili powder, cumin powder, and coriander powder. Cook for a minute to toast the spices.
- Add the jackfruit chunks and mix well with the spice mixture.
- Pour in the coconut milk and season with salt. Stir to combine all the ingredients.
- Cover the pot and let the curry simmer for 20-25 minutes, or until the jackfruit is tender.
- Garnish with fresh coriander leaves before serving.
