Ingredients
- 500g squid ink pasta
- 500g fresh squid, cleaned and sliced into rings
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 4 cups fish or seafood broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
- Add the sliced squid to the pan and cook for 2-3 minutes until it turns opaque.
- Pour in the white wine and let it simmer for a few minutes until the alcohol evaporates.
- Add the squid ink pasta to the pan and stir to combine with the squid and onion mixture.
- Gradually add the fish or seafood broth, stirring constantly, and cook until the pasta is al dente and the sauce has thickened.
- Season with salt and pepper to taste.
- Remove from heat and garnish with chopped fresh parsley before serving.
