Ingredients

  • 500g squid ink pasta
  • 500g fresh squid, cleaned and sliced into rings
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 4 cups fish or seafood broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. Add the sliced squid to the pan and cook for 2-3 minutes until it turns opaque.
  3. Pour in the white wine and let it simmer for a few minutes until the alcohol evaporates.
  4. Add the squid ink pasta to the pan and stir to combine with the squid and onion mixture.
  5. Gradually add the fish or seafood broth, stirring constantly, and cook until the pasta is al dente and the sauce has thickened.
  6. Season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped fresh parsley before serving.
