Risa Bai is a traditional Tripuri spiced tomato chutney that is bursting with flavors. It is a perfect accompaniment to your meals, adding a tangy and spicy kick to your palate.

Risa Bai (spiced Tomato Chutney)

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon salt
  • 1 tablespoon oil
  • 1/2 cup water

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they start to splutter, add chopped onions and green chilies. Sauté until the onions turn translucent.
  2. Add grated ginger, turmeric powder, red chili powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.
  3. Add the chopped tomatoes and water. Cover and cook for 10-12 minutes until the tomatoes are soft and mushy.
  4. Mash the tomatoes with the back of a spoon to get a chunky consistency. Cook for another 5 minutes until the chutney thickens.
  5. Remove from heat and let it cool. Risa Bai is ready to be served.
